What is involved?
The Talbot Collection have partnered with the Kildare and Wicklow ETB (KWETB) to deliver our Talbot Collection Chef Development Programme again this year. Last year, we recruited 19 trainee chefs and we are now ready to recruit and train our next cohort of Talbot Collection chefs of the future! The programme will commence on Monday 17th October 2022. We are looking for enthusiastic and committed trainee chefs to join our team.
Our 3-step approach – Earn while you Learn!
Step 1: Earn while you Learn
Earn while you learn – complete 25 weeks training to achieve City & Guilds Level 2 Diploma in Culinary Skills (equivalent to QQI Level 5 Award).
What does the training involve?
o Apprenticeship style model:
§ Trainee chefs will work 3 days per week in their chosen Talbot Collection Hotel
§ Trainee chefs will work 2 days per week offsite in the KWETB professional training kitchen in Nass Racecourse
o Accommodation & meals provided in Talbot Hotel Carlow, 2 nights per week, to facilitate training in Naas Racecourse (if required)
o Free transport from Talbot Hotel Carlow to training kitchens in Naas Racecourse (return journey)
o On completion in March 2023, trainee chefs will be awarded City & Guilds Level 2 Diploma in Culinary Skills
Step 2: Permanent Employment and Continuous Development
o On completion of the training, trainee chefs will work on a full-time, salaried, and permanent contract of employment in their local Talbot Collection Hotel as a Junior Commis Chef.
o Learn & work on-the-job with a team of experienced chefs
o Continuous development by way of on-the-job training and experience, as well as additional online modules
o Opportunity to take part in the Level 6 National Commis Chef Programme;
o The Talbot Collection are commitment to development and progression, and will commit to continuing to invest in the development of all trainee chefs, both on the job and in further education.
o Progressive pay scale subject to performance and progress
Step 3: Progress & Excel
Work hard, progress and excel in your career as a chef with a growing, progressive, and family-owned Irish company
The finer details:
o Trainee chefs will be required to remain actively working with the company for a minimum of 18 months on completion of the programme in March 2023. Leaving employment before September 2024 will result in the trainee chef having to return the amount of €1,500 to the company. This can be deducted from wages, outstanding annual leave etc. It is important you are serious about pursing a career as a chef and ready for a 2-year commitment!
o Trainee Chef must be available to attend KWETB training kitchens for a block release from Monday 17th October 2022 – Friday 21st October 2022, 2 weeks of full-time training. Accommodation and meals will be provided in Talbot Hotel Carlow free of charge.
o Trainee chef must be available to attend KWETB training kitchens in Naas 2 days per week and be available to work in their Talbot Collection Hotel 3 days per week between Tuesday 1st November and Friday 31st March 2023;
o Trainee chefs must available to work full-time and flexible to work varying shifts to include mornings, evenings and weekends on completion of their training;
o More than 3 days of absence will result in automatic removal from the programme and the termination of your contract;
o Accommodation, meals and bus transfer provided from Talbot Hotel Carlow for the two days training in Naas;
o Must live within the proximity of a Talbot Collection Hotel and be able to commute to work /have own transport;
o Trainee chefs are required to complete projects and exams to achieve their City & Guilds Level 2 Diploma in Culinary Skills
What qualities will our trainees have?
ü Be passionate about food and focused on pursuing a career as a chef;
ü Be available and willing to commit to full-time employment with the Talbot Collection for a minimum of two years;
ü Be hard-working and possess a positive can-do attitude;
ü Be a team player and enjoy working as part of a team;
ü Be eager to learn and motivated by increased knowledge and progression;
ü Have an advanced level of written and oral English. All classes, assessments and on-the-job training are completed in English;
